3/4 Lb. Caramunich I (Steep 30 min. @ 160*)
1 oz Cascade – pellets (60 min)
1/2 oz Kent Golding – pellets (15 min)
1/2 oz Kent Golding – pellets (Dry hop secondary)

1 Whirlfloc tablet (or 1/2 tsp. Irish Moss)
3/4 cup Corn sugar (priming)

use the late extract method. Put grain in a grain bag and steep
in brewpot for 30 minutes at 150º F. At 30 minutes remove
bag and drain. Do not squeeze. Add water to the steep liquid to
make 2 1/2 gallons, heat to near boil, remove from heat, and mix
in 1 Lb. of LME and stir in well. Return to heat and bring to
full boil. At boil add the Cascade hops. At 45 minutes remove
from heat and stir in balance of LME, return to heat and restore
to full boil. At boil add 1/2 oz. East Kent Goldings hops, Wyeast
Nutrient and 1 Whirlfloc tablet or 1/2 tsp. Irish Moss. Boil 15
minutes, remove from heat and cool using whatever method ormally
used, i.e. immersion chiller, counterflow chiller, plate chiller,
ice bath, etc. Cool to 65º F to 70º F and pitch yeast.
Siphon to primary and add water to 5 gallons. Ferment for 7 to 10
days, then transfer to secondary. Soak a square of cheesecloth
and a few inches of string in cheap 100 proof vodka for 10
minutes. Wring out cheesecloth, put 1/2 oz. East Kent Goldings
pellets in center, put a sanitixed glass marble or other small
weight with hops, draw up sides and tie securely with string.
Drop cheesecloth with hops into secondary. Siphon beer to
secondary over hops. Let sit for 2 weeks in secondary. Boil corn
sugar with 1 cup water, let cool, and pour into bottling bucket.
Siphon beer from secondary to bottling bucket and stir gently to
mix with priming sugar. Attach bottling tube to bucket spigot and
bottle, leaving 1/2” to 1” airspace. Store at
70º F for two weeks to carbonate. Drink and enjoy! Improves
considerably aged for 3 months.
